The famous Gedung Kuning building has now housed the famous Permata Singapore Restaurant. The word ‘permata’ translates to jewels which is one of the many words you can use to describe the fine establishment. Located right across the Sultan Mosque, the building serves as an amazing restaurant, entertainment facility and event venue. For a limited time only, the buffet prices start from $42 per person and reservations are highly recommended.
Customers can choose from the 60 over Nusantara dishes available from the buffet, making them simply spoilt for choices! Permata Singapore is not only the first for launching the Nusantara Buffet but they’re also the first for serving up vegetarian-friendly options for their customers! Their executive chef Firdauz Nasir, wanted his customers to fully experience the true and authentic taste of Malaysian and Indonesian cooking so the ingredients used are sourced true to their nature and are fresh.
Upon entry, customers would be greeted with their Cold Seafood Station which serves a range of crustaceans, shellfish and fishes. The freshness of the seafood is just impeccable — truly a perfect appetiser or if you’re looking for something clean after a fiesta of spices in your mouth.
Accompanying the Cold Seafood Station would be the Hand-Blended Sambal station where customers can expect a wide diversity of hand crafted sambal of various flavours and textures. Some have a stronger node of saltiness. Then there’s some that may lean a bit more towards the sourness side but a fan favourite is definitely their Durian Sambal Belachan. This one of a kind sambal was grinded and cooked to perfection so there was a mixture of creaminess, sweetness and spiciness all together. This sambal is more tame on its spiciness so it became the perfect condiment for many.
Moving past all these would be their Assortments corner which holds various traditional Malay crackers and snacks such as Epok-Epok and Lemang that is prepared fresh in bamboo shoots. Alongside this area, customers can also find fresh Ulam that is the perfect palette cleanser for accompanying the heavy dishes that customers will be able to check later.
Finally, the centrepiece, the awaited moment for many — this is where Chef FIrdauz Nasir gets to showcase his skills. While customers still get to anticipate and enjoy classic Nusantara dishes, some dishes have taken a modern twist and another must-try of theirs is the Wagyu Beef Rendang. The sweetness of the beef and spice-packed gravy amplified flavours from the traditional Beef Rendang. The Wagyu Beef is braised and spiced with coconut and butter. So, taking a bite from the beef itself would already be packed with flavours. The Tempoyak Ikan Patin is also another notable dish that many enjoyed. The fish tasted incredibly fresh and had hints of saltiness. The flavours are packed within the banana leaves which made the entire cooking process even more authentic to the Nusantara methods.
Customers can also watch their roti jala and noodles prepared fresh on their live stations. Chefs busied their hands preparing the warmest and freshest dishes for the customers in the midst of being surrounded by the rich gravies.
To conclude, customers can choose desserts from two extremes. One side of the table is occupied by classic Malay desserts such as kuih-muih and bubur manis and the other is full of fusion desserts. One of their signature desserts is their Buah Keluak Brownie which is made from Pangium. The brownie is rich in its chocolate and nuttiness which gave the entire cake an interesting texture.
With the plentiful of amenities available, this establishment serves as the perfect place for a multitude of activities. Children can entertain themselves in the Amazing Chambers Singapura that allows children to be creative and learn about the Malay heritage in-depth. Then there is a Book Room that is more commonly regarded as a cafe that serves as the perfect ambiance for quiet dates and study room.
