The maiden venture of English restaurateur Alan Yau, Madame Fan is reinventing Chinese dining one plate at a time. The bar part of the palatial restaurant is known as The Library, and is the definition of old-school. With ornate furnishings and a muted golden glow, the interior is as inviting as it is luxe. Sip on some classic cocktails, like a peach bellini, or an old-world wine. While you’re at it, tuck into some of the menu’s best offerings, such as their delicious Dim Sum items, drunken crab rice noodles, and raspberry sabayon. It’s no wonder this restaurant was handpicked for the Michelin Guide in 2018.

Amoy Street is crowded with bars, but behind the door with the little key emblem is one of Singapore’s best. Following in the footsteps of the illustrious Sydney and New York editions, Singapore’s Employees’ Only is popular with the post-work crowd and tourists alike. This spot makes dinner and drinks easy with a full lunch and dinner menu of small and large plates, as well as an extensive list of cocktails and spirits. The dinner cocktails boast some of the original recipes carried over from the flagship Employees’ Only in New York, and some original treats inspired by local flavours.

There are no syrups or shortcuts here, so guests can expect authentic flavours and nothing artificial. Located on the rooftop of the National Gallery of Singapore, this classy cocktail bar serves up innovative drinks with a refreshingly local twist. The cocktails here range from fruity to earthy, featuring ingredients such as ghost peppers and agave nectar. There are also spirits, beers, and wines for the less adventurous. Chow down on some of the kitchen’s bar bites with your tipples. The roasted pork belly is a well-known local offering that is executed to perfection here, as are other classics like Sichuan pepper chicken and skinny truffle fries.
